Software Engineering at University

Hello, I am planning on applying to software engineering programs in Ontario, BC, and Alberta. I want to learn not just computer code and programming, but also security vulnerabilities, hardware and networks, etc. Ideally I would like to specialize in computer code/programming since it looks to permit.

I'm wondering, however, if universities give this flexibility in your electives or is it rather set (like most engineering programs I've heard about)? Is it easy to decide on what courses to take? What are bird courses and what are difficult ones?
